May I say the "Namesis" I think is probably the greatest chocolate cake ever created. I just love that cake. Well, we kind of agree. It's just, it's perfect. I almost, you know, I don't need to write a book above. I know, I know, you do.
I book about "Namesis." It's like a just "Namesis" I wrote. Why do you like about it? I love the fact that it has this incredibly kind of moist, moosey-like texture, but it's also really dense, deep, dark chocolate flavor.
This explosion of flavor combined with a really beautiful texture. It's also just, and I love the fact that you cook it in that water bath, but you never get the cake crumb that you do if you just bake, you get something that's so kind of in between a pudding and a cake, which I think is so beautiful. It's just a pleasure and a mouth.
I love the way you know how to make it. Did you make it when you were here? I did it.
“I studied because what I really realized is that you need to whip and whip and whip.”
That's a mistake that people often make when they're making this. They think, "Oh, I'll just put it in the stand mixer." One of my favorite two minutes of film is when Sean was explaining how to make the press chocolate cake. And what did you do? Well, it just held the bowl of my head.
Because you meant to be able to hold the bowl upside down, aren't you? So the egg white doesn't fall out. That's when you know the egg white is stiff enough. But I mean, I was just showing off it could have gone badly wrong. And then I'd have probably gone, gone, gone, gone, gone, gone, gone, gone, gone.
Physically white, covered in egg white. But the good thing about Nemesis is it's gluten free. So anyone that doesn't eat gluten, and there's many people now that don't, it's even healthy. It's a healthy result.
You know, it's also healthy because it's not loaded with sugar. And so you're just getting the depth of the chocolate flavor instead of, I think American desserts tend to read sweet. Mm-hmm.
When you take a bite of a big American cake, the first thing you read is sugar,
whereas with the Nemesis which you read is chocolate. Yeah, I love to tell you the full chocolate. Nemesis is healthy. I often say that. This is really, really healthy dessert.
Not only has chocolate sugar, but right next. Right, but it's unhealthy about everything. Nothing, nothing. Nothing, nothing.
“If you have a meal gear, you know, it's like, how do you finish a meal at the river cafe?”
And Nemesis is, and all actually I think all our desserts. It's a strong way to finish a strong meal. I agree. I also love the, the carbohydrate a lot too. Yeah.
Which I think you almost, you, you really take that carbohydrate all too. Yeah. Yeah, we do. We do it outside because I would take, we take it so dark. That almost you couldn't be in a kitchen.
Yeah. And get that, you know, those fumes. It's, I used to, I was sitting outside on the, you know, all right, it's like the kitchen and doing it. And doing it darker and darker.
Very sugar. Yeah, it's very good. Yes, it's very good. And then the soul bay, it's also about that. Super healthy.
Mm-hmm. Because it has, um, it's just, um, water, sugar, and cocoa. I mean, it's really, I mean, you can add Vecca Ramano, if you want, to make it a bit more fun.
“But it is, so, I remember the first time I tried that,”
I couldn't believe that anything could taste so chocolatey, but not have, I don't know, egg or cream or something. It would make it so rich and, but that is just, I think we should read it. I think we should read it.
I have it on the menu to you. Yeah. Yes. You know, who loves it is Francis Coppola. And he'll call it up before he comes.
Make sure that we have it. But you have to talk about it. Yeah, yeah, yeah. I understand that. I wonder if I should go back to it.
