In the 1980s and ‘90s, China went through a massive economic transformation. New government policies allowed everyday people to open their own businesses and accumulate wealth. Rural folks moved to cities in huge numbers in search of opportunity. And for the first time, privately-owned restaurants were allowed to open. In the 40 years since, an entire restaurant scene has been created — something prior generations could never have imagined. So what does this scene look like? Dan travels to Beijing to find out. His first stop is at one of the most exclusive restaurants in the city, Chef 1996, for a 16-course dinner and a chat with the owners. The next day he hits up a beloved hot pot chain, Haidilao, where waiters put on dance performances with noodles, manicures are offered, and robots whiz around delivering dishes. Somali cuisine is a mixture of many traditions, from meat prepared according to nomadic customs, to a spice mix made possible by medieval Indian Ocean trade routes. There are even pasta dishes, owing to Italian colonization until 1960 – and you’ll often find a banana served on the side. Ifrah F. Ahmed has made it her mission to document and preserve the food of Somalia in her new cookbook, Soomaaliya: Food, Memory and Migration. At a time when Somali and Somali-American culture is under threat, Ifrah’s work feels especially important. Somali culture prizes its oral tradition, but Ifrah has decided to write it all down: the history, the recipes, and her own story. This week, Dan visits Ifrah in her kitchen as she makes an iftar meal for Ramadan, and he tries his hand at making sambuus (a deep-fried meat dumpling). Asma Khan started her cooking career hosting secret supper clubs in her apartment, when her husband was traveling for work. Now she's staffed her restaurant entirely with women, all of whom learned to cook as housewives and nannies. As she tells Dan, her advocacy is driven by the pain she faced as the second daughter in her family, in a society that prized boys over girls. Danny Trejo, From Lockup to Donut Shop (Reheat)

When ICE Came, This Minnesota Restaurant Stepped Up
El Burrito Mercado has been a bedrock of West Side community in St. Paul for nearly 50 years. It’s changed a lot over that time, evolving from a small grocery store into a restaurant, deli, bakery, and so much more. Now, it’s had to change again, as thousands of federal immigration agents have descended on this Twin Cities neighborhood over the past few months. Milissa Silva, the co-owner and CEO of El Burrito Mercado, tells us the story of how her immigrant parents’ business became a community hub, and how she and her staff have increased security and set up a food delivery operation for people afraid to leave their homes. At 90, Jacques Pépin Is Still Teaching And Learning
Jacques Pépin just turned 90, and he’s spent his career defying expectations. By 1958, at the age of 23, he had cooked for three French presidents. But he left that life to work at a high-end restaurant in New York, then gave that up to cook at Howard Johnson’s, making food for the masses. After a life-altering accident, Jacques found his next love: teaching other people how to cook. By the early ‘90s he was one of America’s best-known TV chefs.
